Whether youre celebrating the holidays somewhere sunny like Florida or snowy like London, we all dream of that magical white Christmas so often seen on the big screen. So when the weather isnt cooperating, or you simply want a little extra white goodness in your celebrations, this recipe brought to you by our favorite traveling cook, Jacqueline, is sure to make the most wonderful time of the year even sweeter!
Recipe for White Christmas Dessert Bars
250g white chocolate melts
100g copha (a solidified form of coconut oil)
1 1/2 cups rice bubbles (puffed rice)
100g dried cranberries
100g roasted pistachios
100g roasted hazelnuts
1 cup (90g) desiccated coconut
1 teaspoon vanilla extract
Line a 30cm x 20cm (base) baking pan with baking paper. Melt the chocolate and copha in a heatproof bowl over a saucepan of simmering water (dont let the bowl touch the water). Mix the dry ingredients together and then fold in the white chocolate and copha. Pour mixture into the prepared pan, pressing down with a large metal spoon. Refrigerate for 4 hours or until set
Turn slice on to a chopping board. Using a knife that has been dipped in hot water, cut into squares. Serve.
